This sauce is great on red meat or chicken.

Red Wine Sauce

  • 2 tbl minced shallot
  • 1 tbl rosemary chopped very fine
  • 1/2 tsp salt
  • 3 large egg yolks
  • 10 oz unsalted butter, melted
  • 2 drops YL Lemon essential oil
  • 2 drops YL Black Pepper essential oil


  1. Add wine, shallots, rosemary, and salt to a heavy bottom sauce pan.

  2. Cook over medium-high heat until reduced by 3/4.  

  3. Add 2 tbl cold water and yolks, whisk constantly over low heat until mixture has doubled in size and become airy and frothy.  This should take a few minutes, be careful not to cook the eggs to fast, or they will scramble.  

  4. Add the melted butter, very, very slowly at first until the emulsion forms, then whisk in a slow constant stream until all butter is incorporated.

  5. Remove from heat, add lemon and black pepper essential oils.

  6. Taste and adjust seasoning if necessary (salt and/or more chopped rosemary).
