Even if you have always hated brussel sprouts, there is a good chance you will like these. Of course bacon can always make food taste better…and the addition of a sweet, and savory balsamic reduction fortified with Young Living essential oils makes this holiday inspired side dish a winner. For the best results in your cooking, try to cook in season with ingredients grown or harvested as close to where you live as possible. Brussel sprouts are in season and taste the best in fall and winter months. This recipe will feed 6-8 people. Enjoy.
Brussel Sprouts with bacon and balsamic reduction
- 2 pounds brussel sprouts
- ½ red onion sliced thin
- 6 pcs thick cut bacon diced
- ¼ cup balsamic vinegar (for reduction)
- YL Black Pepper E.O.
- YL Rosemary E.O.
- 2 Tbl butter
- Salt and pepper to taste
Put balsamic vinegar in a small sauce pan. Bring to a boil, then simmer until reduced by half. Allow to cool. Add essential oils, stir to combine.
Render fat and crisp bacon in a medium saute pan. Drain and reserve drippings.
Trim and half brussel sprouts.
In a large pot of heavily salted water, blanch brussel sprouts for 2 minutes. Immediately shock in an ice bath. Drain well once completely cooled.
Add 1-2 Tbl reserved bacon drippings to a large saute pan or cast iron pan and heat.
Saute red onion until slightly caramelized
Add brussel sprouts,butter, and salt. Cook until slightly crispy and tender.
Add half the cooked bacon, and cracked black pepper.
Serve garnished with rest of cooked bacon and drizzled with essential oil infused balsamic reduction.
